Eat your Brussels Sprouts!

The season’s first BRUSSELS SPROUTS will arrive from Lancaster Farm Fresh on Friday morning.

Now is the time to cook up those sweet fresh-dug root vegetables! In addition to our already wide variety of tasty roots and tubers, we will be getting JAPANESE SWEET POTATOES (whose red skin, white flesh, and sweet, chestnut-like flavor make them perfect for roasting), SCORZONERA/BLACK SALSIFY (an old-fashioned vegetable said to taste like oysters), GERMAN BUTTERBALL POTATOES (an heirloom variety named for its wonderful richness!), and CYLINDRA BEETS WITH GREENS from Lancaster Farm Fresh Coop on Friday. GOLD BEETS WITH GREENS will arrive through Common Market on Wednesday.

The apple varieties just keep coming! GRIMES GOLD APPLES (an heirloom cooking apple said to “melt” when cooked) will be delivered by Green Meadow Farm on Thursday, PINK LADY & BRAEBURN APPLES will arrive from Beechwood Orchards on Saturday, and CERTIFIED ORGANIC CAMEO APPLES from Kauffman’s Fruit Farm have been available at the stand since Tuesday.

No matter what you’re looking to cook, the Farmstand has the winter squash for you! This year, the farmers in this region have pulled out all the stops in the range and quantity of squash available, including some very hard-to-find heirloom varieties! New arrivals include: GREY HUBBARD SQUASH (dense and nutty, wonderful in soups, bread puddings, or just roasted and served with butter!) and SWEET LIGHTNING SQUASH (a small, sweet squash with both decorative and edible appeal, great for stuffing) from Lancaster Farm Fresh (Friday), plus several enormous NECK PUMPKINS (tasty local heirloom and relative of butternut squash, best in soups and baked goods) from Henry Fisher’s Farm.

A new shipment has arrived from our friends at Maine Sea Salt Company, including Pure Atlantic Sea Salt, Dulse Sea Salt, Herb Sea Salt, and a new item: APPLEWOOD SMOKED SEA SALT sold in a grinder! This salt is gathered straight from the Gulf of Maine through solar-evaporation, then smoked over an applewood fire giving it a subtle smoky sweetness perfect for pork dishes.

GILDA’S SWEET MERINGUE KISSES from Gilda’s Biscotti are back for the winter. Beware: these melt-in-your-mouth morsels are dangerously addictive!

As the summer winds down, and the first early season apples show up at the 'Stand, most of us aren't ready to accept this clear sign that the tomatoes won't be around for much longer. But now, in mid fall, things have shifted and we are more interested in exploring the nuances in flavors between the
varieties, and how they're best put to use. Of the 12 varieties we have, in stock, this week, here are a couple of sound bites:

Autumn Apple-Squash Crisp

INGREDIENTS

* 4 1/2 cups butternut- squash - peeled, seeded, and cut into 3/4-inch chunks
* 2/3 cup packed brown sugar
* 1/2 cup all-purpose flour
* 2 eggs
* 2 teaspoons milk
* 2 teaspoons vanilla extract
* 2 teaspoons ground cinnamon
* 2 teaspoons ground nutmeg
* 1/2 teaspoon ground cloves
* 4 large Granny Smith apple - peeled, cored and chopped
* 2 large carrots, peeled and shredded
* 1 cup raisins

* Topping
* 2 cups rolled oats
* 1 cup wheat bran
* 1 cup packed maple sugar
* 1/2 cup whole wheat flour
* 1 tablespoon ground cinnamon
* 1/2 cup melted butter

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.

2. Pour about 1 inch of water into the bottom of a pan. Place the squash into a steamer basket fitted into the pan. Bring to a boil, then reduce heat to medium, cover, and steam the squash until tender and easily pierced with a fork, about 15 minutes. Cool.

3. Place the squash, 2/3 cup brown sugar, 1/2 cup all-purpose flour, eggs, milk, vanilla, 2 teaspoons cinnamon, nutmeg, and cloves in the bowl of a food processor. Pulse until the mixture is smooth. Pour into a large mixing bowl. Stir in the apples, carrots, and raisins until evenly blended. Spread the mixture over the bottom of the prepared baking dish.

4. Mix together the rolled oats, wheat bran, 1 cup brown sugar, 1/2 cup whole wheat flour, and 1 tablespoon cinnamon with the melted butter in a bowl until crumbly. Spoon the topping over the apple-squash mixture.

5. Bake in preheated oven until top is golden brown and the apples are tender, 30 to 45 minutes.


Cook's Tip * Any variety of squash can be used in this recipe. You can even mix and match, combining winter squash, pumpkin, butternut, or acorn squash to make 4 cups.
