The first of the wild harvested greens are arriving on Friday from Lancaster Farm Fresh. WILD HARVESTED WATER CRESS is zesty and succulent, perfect for spring salads or soups. STINGING NETTLES are incredibly rich in vitamins and minerals with a rich spinach-like flavor, and are wonderful added to soups and sauté’s, or infused into tea. Don’t be scared away by the name…though plants are covered in tiny stinging hairs, the compounds that sting are neutralized by heat and drying.
A new porky treat arrived over the weekend: Otterbein Acres Farm's SAUSAGE and PORK CHOPS from their free roaming heritage breed Large British Black hogs. This critically endangered breed produces incredibly rich, meaty flesh, almost beefy in its taste and texture. Wonderful paired with potatoes!
This spring, we have been lucky enough to snag a wheel of Valley Shepherd Creamery’s OKTOBERKAS! This intensely seasonal sheep’s milk cheese is made in limited quantities each October, using only the incredibly creamy end-of-season milk. This decadent gouda-style cheese has a delicately sheepy tang and smooth finish.

We have all heard of picking wild huckleberries or strawberries while on a walk in the woods, but most people do not realize that the forest and field are full of wild edibles. Luckily for us, many of our local farmers know what wild greens are nutrious, delicious, and plentiful this time of year.
Wild harvested greens are edible leaves, seeds, roots, and tubers of plants that are gathered from the wild. With some ingenuity, many farmers are using knowledge that has been around since Native Americans and colonists harvested wild plants year-round. Today, some of these greens are found in the wild, while others are propagated on the farm.
Many of these plants are found across the country; some are considered weeds, while others are coveted by food connoisseurs. Commonly found wild harvested greens are lambs quarters, purslane, wild dandelion, watercress, ramps, and chicory nut. Do not fear, however, because harvesting wild greens is regulated, so they are free of chemicals and cannot be harvested near roads.
Keep your eyes out this week at the Fair Food Farmstand for WILD HARVESTED WATERCRESS and STINGING NETTLES from Lancaster Farm Fresh Cooperative. These farms are certified organic and consciously harvest these wild edibles.

Green Village Fundraising Events
Green Village Philadelphia is hosting a month long fundraising event in partnership with Philadelphia Brewing Company (PBC) starting April 15th, just a few days before Earth Day. PBC is selling its spring beer, Fleur de Lehigh, at a discount to participating bars and restaurants and Green Village will receive $1 from every pint sold - until the brew runs out. So get yourself in beer drinking shape and we will keep you posted on where the beer is sold near you? Cost for this - just the usual price of the pint of Fleur de Lehigh.
To round it off, Green Village Philadelphia is throwing a party!

Nettle Polenta
Total time: About 30 minutes
Servings: 6
Note: When handling the nettles, wear gloves or a plastic bag to protect your hands; rinse them in a sink full of cold water to remove any dirt. Carefully remove the leaves from the stalks.
4 cups washed nettle leaves
2 teaspoons kosher salt
1 tablespoon olive oil
1 cup polenta, or organic coarse-ground corn meal
1/3 cup grated Parmigiano-Reggiano
1/4 cup crème fraîche
Salt and freshly ground pepper to taste
1. Bring a pot of water to a rolling boil and, using a pair of tongs or rubber gloves, add the nettles to the pot. Blanch the nettles for about 1 minute. Drain, coarsely chop and reserve.
2. In a heavy-bottomed medium pot, bring 5 1/2 cups of water to a boil. Add the salt and olive oil, then slowly pour in the polenta, stirring constantly with a wooden spoon.
3. Reduce the heat to medium-low so the polenta cooks at a low simmer (bubbling slightly). Stir frequently until thick and creamy, about 17 to 20 minutes.
4. Add the Parmigiano-Reggiano, crème fraîche and nettles, whisking until combined. Taste for seasoning and serve immediately.
