I am having an excellent time out here (and eating like royalty) working with Melanie and Mark. South central PA is a shockingly bubbling hub of sustainable activity - within the immediate area between Newburg (the tiny town where I am) and the small college town of Carlisle 4 CSAs are supported… the amount of activism out here has been a refreshing side-bonus to my cheese apprenticeship here. Speaking of, Mark and Mel could really use another intern. I can't emphasize enough what a rockin' opportunity this is for someone interested in rotational pasture systems/ raising laying heritage hens & most important for me, making true farmstead cheese! I've learned an immense amount in such a short time about the other end of cheese and affinage and have even been given free reign to work on my own cheese recipe!

Have you ever wondered what it was like to live and work on a farm? Keswick Creamery is now accepting applications for 2009 internships at Carrock Farm, LLC.
We are a 40-cow dairy farm with a small on-farm processing plant. Our Jersey cows are rotationally grazed using mostly organic practices. Using our own milk, we produce raw milk aged cheeses, pasteurized fresh cheeses, yogurt and other value-added products that are sold in regional farmers markets and to local restaurants.
This is an opportunity to be part of the complete process--from the grass to the consumer. You will learn how to make assorted types of farmstead artisan cheeses, yogurt and value added products and acquire skills for rotational grazing, dairying and animal husbandry. This internship requires weekly attendance at farmers markets and will provide an excellent overview to successful direct marketing.
Interns will also be given the opportunity to develop their own cheese recipes.
Other farm activities available include laying hens and a large market garden as well as on neighboring farms raising meadow-raised veal, meat goats and pastured poultry.
Internships begin in May and run through October/November with a six-month minimum commitment. Interns will be provided with their own room in a three-bedroom house with a shared kitchen and bath as well as a weekly stipend.

Green Village Philadelphia is hosting a fundraiser
The Philadelphia Brewing Company brewery in Kensington
Sunday May 17th, 1-4pm
Three bands: the Estelles - all girl country, the Rockafilly's, and Jim Fogarty and the Tonebenders; Fabulous food from Cosmic Catering, Night Kitchen Bakery and others and of course, fabulous PBC beers - all for the price of your generous donation!
Cost: $25 minimum per ticket. Family friendly. Kids under 16 get in free.
There are also volunteer opportunities if you want to do an in kind donation of your time.
Slow Food Philly Pigroast Fundraiser
Join Slow Food Philly for their annual Pig Roast Fundraiser Event at the Philadelphia Brewing Company. Enjoy this convivial gathering in the brewery's beautiful Court Yard and feast on expertly roasted pork (Italian Porchetta Style) and a great variety of vegetarian dishes and dessert prepared by Restaurant Rx, while enjoying various keg-fresh PBC brews.
When: Saturday, May 30, 1-4 p.m.

Watercress and Radish Stuffed Eggs

Yield: Makes 12 stuffed eggs
6 hard-cooked large eggs
3 tablespoons sour cream
1 teaspoon Dijon mustard
1/2 teaspoon white-wine vinegar
1/2 cup packed watercress sprigs, chopped fine
3 tablespoons minced radish (about 3 large)
3 tablespoons minced celery (about 1 rib)
Garnish: finely chopped radish
Cut a paper-thin slice off both ends of eggs and halve eggs crosswise. Force yolks through a sieve into a bowl (or mash with a fork) and stir in remaining ingredients and salt and pepper to taste. Transfer filling to a pastry bag fitted with a large decorative tip and pipe into whites, mounding it. The stuffed eggs may be made 6 hours ahead and chilled, covered.
Just before serving, garnish eggs.
Red Leaf, Radish, and Pine Nut Salad

Just two additions—citrus zest in the dressing and toasted pine nuts—transform this simple salad into something memorable.
Yield: Makes 4 servings

Total Time: 15 min
1/4 cup extra-virgin olive oil
1/4 teaspoon grated lemon zest
1/4 teaspoon grated orange zest
1 tablespoon fresh lemon juice
1 tablespoon fresh orange juice
1 large head red-leaf lettuce (1 pound), torn into pieces
6 radishes, cut into thin wedges
1/4 cup pine nuts (about 1 ounce), toasted
Whisk together oil, zests, juices, a rounded 1/4 teaspoon salt, and 1/4 teaspoon pepper in a large bowl until salt has dissolved.
Add lettuce and radishes and toss. Serve topped with pine nuts.
Radishes with Goat Cheese

This recipe can be prepared in 45 minutes or less.
Yield: Makes 24 hors d'oeuvres
1/2 cup soft mild goat cheese, softened
3 tablespoons heavy
12 large radishes with tops
Garnish: 24 small fresh chervil sprigs
In a bowl stir together goat cheese, cream, and salt and pepper to taste until combined and transfer to a pastry bag fitted with a 1/4-inch tip. (Alternatively, transfer mixture to a small heavy-duty sealable plastic bag and press out excess air. Snip off 1 corner, making a small hole.) Cheese mixture may be made 2 days ahead and chilled in bag. Bring cheese mixture to room temperature before proceeding.
Trim radish tops to 1/2 inch and halve radishes lengthwise. Decoratively pipe mixture onto radish halves.
Garnish hors d'oeuvres with chervil.
