NEW THIS WEEK:

Said to represent “classic Jersey Tomato flavor”, the RAMAPO TOMATO has a loyal following among farmers and old-timers of the state. Having fallen out of production for the last two decades, the Ramapo is starting to make a comeback for its “tangy, mouth-filling flavor”. The first sweet BARTLETT PEARS will come from Green Meadow Farm on Thursday, as well as crisp SECKLE PEARS from Overbrook Herb Farm on Friday morning.

Smooth and firm-fleshed, RUSSIAN BANANA FINGERLING POTATOES are said to be superior salad potatoes. Lancaster Farm Fresh will deliver the first new batch on Tuesday.

With the heat closing in, and the harvest pouring in so exuberantly, it’s hard to imagine that winter will ever return … that a time will come when fresh tomatoes seem painfully far away, when you dream fondly of the crunch of cucumber, when you would give anything for a ripe peach.

Despite the desire to deny the fact that winter will come eventually, now is the time to start thinking seriously about preserving produce. Whether you have the time and equipment for freezing, canning, pickling or drying, I guarantee that you’ll thank yourself in Febraury! Diversified Vegetable and Pastured Beef Farm


When: Sunday August 24, 2008. 1:00pm - 3:30pm
Where: Pequea, PA

Come visit this beautiful 110-acre preserved farm located alongside the Pequea Creek. Protected from development by the Lancaster Farmland Trust, the Rineer family has ensured that their land will remain available for agricultural purposes alone for generations to come. Daryl Rineer will show us his family's diversified vegetable and beef farm where we will visit the pasture-raised cows and learn about the benefits of a grass-based diet to animal health and happiness. You'll be able to taste the difference yourself when we have some of Rineer Family Farm's own Black Angus beef burgers at our picnic!

Ticket price includes a deliciously fresh and local picnic, and a donation to Fair Food.
Prices: $25 Adult, $12 Child (6-13). Kids under 6 are free. FMNP (WIC or Seniors) participants receive a 50% discount.

Apple Pie with Cheddar Cheese Crust

Ingredients

Crust:
* 1-1/2 cups flour
* dash of salt
* 1/2 cup shortening ~ cold
* 1-1/2 cups (6 oz.) shredded sharp cheddar cheese
* Note: Our Raw Milk Cheddar will be great here!
* 4-6 Tablespoons water
* small splash of vinegar

Filling:
* 1/2 cup sugar(brown or white - both work well)
* 2 Tablespoons flour or 1-1/2 Tablespoons corn starch
* 1/4 teaspoon cinnamon
* 6 cups sliced peeled apples
* 2 Tablespoons butter or margarine

Directions

1. Heat oven to 425 degrees F.
2. Combine flour & salt; cut in shortening until mixture resembles coarse crumbs.
3. Blend in cheese.
4. Sprinkle with water while mixing lightly with a fork; form into ball. Divide dough in half.
5. Roll one part to 11" circle on lightly floured surface.
6. Place in 9" pie plate.
7. Combine sugar, flour, & cinnamon.
8. Mix with apples.
9. Place mixture in pie shell; dot with margarine.
10. Roll out remainder of dough to 11" circle; place over apples.
11. Pinch and seal edges of crust & flute4
12. Cut slits in top of pastry to allow steam to escape.
13. Bake at 425 degree F, for 30-35 minutes.
